Endorphins: the human body's happy drug. Your body produces them naturally to alleviate pain. That's why after having exercised, you feel good even though your muscles are sore. Oddly, endorphins are also produced by human contact. I don't really know why, but then I'm no biologist. I just think it's interesting that running and being touched by another person both cause your body to feel better and your mood to improve. Again, I'm no biologist, but I think that this might be why some people are so into fitness dating. You can get your erotic, fit fix all at once, doubling your pleasure.
Being fit and pursuing an active lifestyle is fun in its own right, but it's nice to have someone to share that lifestyle with and who will understand your obsessions. Now, of course, you can always meet people at the gym, but whether you're a gal seeking fit men or vice versa, it's not a bad idea to look to meet other people like you online because there's way more to fitness than spending time on the weight machines. Camping, rock-climbing, sailing... all these things might be your cup of tea, and you might have more fun sharing the experiences with someone else.
On top of it being a lifestyle choice or even being concerned with appearances, looking for a fit cutie can be a really good way to set up some erotic, fit fun. That might sound odd, but it wouldn't if I were talking about, say, dancing, but the idea is the same. Depending on the situation, it could work. Personally I wouldn't last too long in that type of relationship--it would get boring for me. I like strong women, educated women, and yes, good looking women, but I have to go with the whole package.
